Observation (CORRECTED DURING INSPECTION): Paper towel dispenser is missing paper towels in cake decorating area.
Corrective Action(s): Operator replaced new paper towel roll in dispenser during time of inspection.

209 - Food not protected from contamination [s. 12(a)]
Observation: Food trays on racks should be covered and protected from contamination. Some food trays did not have covers or plastic wrap.
Corrective Action(s): Ensure all trays are covered and additionally, keep one empty tray at the top of each rack to protect top trays from any contamination.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Thorough cleaning is required in hard to reach areas and the following:
1. Walkin cooler ventilation/cooling fans in warehouse area
2. Racks being used for dry food storage in warehouse area
3. Behind the cooking area in bakery processing area
4. Walls in bakery area
Corrective Action(s): All cleaning should be completed as soon as possible.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: The following observations were noted:
1. Dented cans (crushed tomato cans) found in facility. Operator informed that these cans are being used for non-food related procedures (ie. making table height adjustments).
2. Cardboard was found in the walkin cooler to line pallets. This can lead to contamination and lead to the growth of pathogens.
Corrective Action(s): 1. Do not use any food items for non-food related procedures. Remove all dented cans immediately.
Install or use another method for making height adjustments to tables.
2. Remove all cardboard in the walkin cooler and thoroughout the facility.

Comments

Routine inspection.
Handwashing stations are fully equipped with bakery processing area and washrooms with hot/cold running water, liquid soap and papertowels.
Walkin coolers at 4c and equipped with thermometers.
Display cooler in front customer area at 3c.
Walkin freezer at -31c.
Dishwasher reached 72c at dish level for rinse cycle.
NOTE: dishwashing area has new grease trap and all pooling of water has been eliminated.
Bleach water at 100ppm concentration for sanitizing.
All sanitizer buckets are being labelled.
All foods are being stored off the floor and/or in containers with lids.
RECOMMENDATION: Ensure all containers are tightly sealed at all times.
Flour and sugar is being stored on pallets and plastic wrapped.
Pest control is in place and no evidence or signs of pest activity noted during time of inspection.
Overall sanitation thoroughout facility has improved however see above noted violation for specific areas that require attention.
All employees observed to have proper protective wear (ie. aprons, hair restraints, gloves).
RECOMMENDATION: Ensure all employees are washing hands on regular basis.

The following requires operators attention:
1. see above noted violation(s)
2. Stainless steel table in bakery area needs to be repaired. Bottom shelve is not level and this can lead to spills/contamination.
