Comments

Water activity test is required for honey butter to confirm that it is safe without refrigeration. Submit standard recipe and lab test within 2 weeks.
Temperatures of cooler and cooler inserts as well as sanitizer strength should be recorded daily.
Keep copies of all FOODSAFE certificates on-site for review.
Additional lighting is required in the dishwashing area to facilitate easy cleaning of surfaces and equipment.
