Premise is sanitary. No signs of pests.
New pest prevention measures installed at back entrance - good.
Food protected from contamination.
Containers and utensils are sanitary.
Stirring spoons are held in ice baths.
Hot and cold water available.
Hand washing sinks in use with liquid soap and paper towels.
Hot holding units at 60C and above. Soup units at 61.2C.
Walk in freezer at -8C, bagels.
Recommendation - Ensure this unit can maintain temperatures of -18C overnight and remove ice build up or service unit when necessary.

Note: Deli cooler top shelf ambient temperature at 7C to 10C during rush hour. Contents held in ice bath to maintain 4C and below - good work.
Unit is able to reach 4C and below in less than 2 hours based on records.

All other coolers at 4C and below.
All units have temperature monitoring in place. One dedicated raw eggs cooler at 2.6C - good.
3 compartment sink in use. 200 ppm to 400 ppm Quat sanitizer detected.
Sani buckets are labelled and time stamped.
Staff demonstrate good personal hygiene and clean uniforms.
