Observation: 1. Build up of mould noticed on the beer lines and the celiing of the beer walk-in cooler.
2. Food debris and mould noticed on the shelves and on fan cover in the sliding door cooler.
Corrective Action(s): 1. Clean the beer walk-in cooler ceilign, walls and beer lines to remove mould.
2. Clean the sliding door cooler shelves, door railing and fan cover. ( By January 18, 2019)

Comments

* Orkin PCO services has been hired for pest control. According to the chef, a substantial reduction has been noticed in mice activity.
A number of snap traps and glue traps seen in use. Good. Majority of the holes in the walls have been sealed.
Overall, great improvement noticed in sanitation of the premises. All items and equipment are now stored off the floor. Good.

However, all old mice droppings must be removed especially from the floor corners in dry storage rooms and the hall way.
Check floor throughout the premises especially underneath and behind all equipment and shelving and clean any droppings. Use bleach mop to sanitize the floor.

* No Quats sanitizer and iodophore disinfectant test strips available on site. These test strips must be available to staff for testing quats and bar washer iodine levels daily.
* Replace the light bulb or install another lighting fixture in the dry storage room to improve lighting intensity ( By January 20, 2019).

Sliding door cooler at 4 C.
Beer walk-in cooler at 4.5 C.
Preparation cooler < 4 C.
Upright freezers < -18 C
Deep freezers below -18 C.
Dishwasher final rinse: 100 ppm chlorine at the plate surface
Quats sanitizer at the dispenser tested 200 ppm.
Bar washer iodine tested: 25 ppm.
Hand wash stations supplied with liquid soap and paper towels.
Temperature and sanitation records are up to date.

Continue to maintain good hygiene and sanitation.
