Observation: Ice machine for the front bar requires cleaning. Brown/pinkish slime observed on the inside surface.
Corrective Action(s): Ensure to empty out the machine, wash- manually scrub clean, and sanitize the inside. [CORRECT BY" THURSDAY]

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No sanitizer available for use. Staff could not locate the sanitizer spray bottle. 200ppm chlorine solution was prepared in a bucket and prep surfaces were sanitized using the solution at this time.
Corrective Action(s): Ensure to have 100-200ppm chlorine solution available for use at all times. All food prep surfaces MUST be sanitized before initiating any food prep, after each possible contamination and every 2 hours during operation. ALL KITCHEN STAFF MUST BE AWARE OF THIS.

Observation (CORRECTED DURING INSPECTION): Sugar bin stored under prep counter had garlics/food debris on top. Staff was hand mixing vegetable mixes on the side and some of the food bits went into the container. Staff emptied out the top part of sugar from the bin at this time and place the lid.
Corrective Action(s): Ensure to cover lids after each use to protect food from contamination.

Observation: Rodent droppings observed from the back storage areas only. None observed from the food prep/food storage area. Traps in place.
Corrective Action(s): Ensure to remove droppings from corners by the dishwasher, and storage shelves as shown at this time. Ensure to monitor for droppings every morning, remove droppings and treat the affected area using bleach solution.

Observation: Food debris/oil observed from floors under storage shelves.
Corrective Action(s): Ensure to clean this area on a more regular basis. All food debris/oil must be removed after each shift to prevent pest infestation. [CORRECT BY: THURSDAY]

Observation: Dishwasher pipe by the pressure gauge above leaking.

Comments

Routine inspection conducted:

-Handwash station adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating below required temperature of 4'C; Freezer operating below required temperature of -18'C.
-General food storage practice satisfactory throughout. All properly contained/covered with food grade/pest proof containers.
-Ventilation canopy hood serviced and maintained. Next cleaning scheduled for July 2019.
-Low temperature dishwasher achieved 50ppm chlorine at the plate level after final rinse.
-Ice machine satisfactory. Scoop not in use at this time.
-Front two bars satisfactory. Ensure to have paper towels available for use when these bars are in use.
-Washroom handsinks satisfactory.

General sanitation of the food prep area satisfactory. Equipment surfaces/floors in sanitary condition.

Follow-up inspection will be conducted on Thursday, June 27, 2019. In addition to the infractions listed above, the following will be checked during the follow-up inspection.
