Observation (CORRECTED DURING INSPECTION): 1. Observed a container of cooked tapioca pearl stored outside. Internal temperature measured at 18C. The container was kept outside for 3-4 hours. Pearl discarded at this time.
2. Observed a container of chopped cilantro stored in water. Water temperature was measured at 14C.

Observation (CORRECTED DURING INSPECTION): Observed a rice scoop and a rice mold stored in a container of water with cooked rice grains floating in it. Water temperature measured at 18C. Operator removed aforementioned utensils. A clean set of utensils was prepared which is now stored in ice.

Observation (CORRECTED DURING INSPECTION): Bleach sanitizer for sanitizing food contact surface was not available. Pails of bleach sanitizer (50-100 ppm) prepared at this time.

Observation (CORRECTED DURING INSPECTION): Hand washing station behind the cashier was obstructed by a blender jar. Blender jar removed out of the sink basin at this time.

Observation (CORRECTED DURING INSPECTION): Observed one of food containers in the walk in cooler with a tong stored in a way the handle touches the foods. The tong removed at this time.

Observation: Observed rodent droppings under the counter where rice cooker is.
Corrective Action(s): Clean and sanitize areas affected by rodent droppings. Soak rodent droppings with 100-200 ppm bleach solution for 10-15 minutes then pick them up with paper towels. Correct this by: Feb 2, 2022

Observation: Observed sanitation issues in the following areas: food debris on dry storage shelves, accumulation of dirt and food debris along the floor/wall junctions throughout the kitchen, spilled rice grains at staff personal item storage area, sticky residue on the floor of drink make station, pool of water at the dish pit and behind the grills/fryer area.
Corrective Action(s): Clean and sanitize areas noted in the observation section above thoroughly. Correct this by: Feb 2, 2022

Comments

Routine inspection conducted:
Hand washing stations fully equipped with hot and cold running water, liquid soap and paper towels.
All coolers (walk-in cooler, under the counter coolers, stand alone coolers, etc.) measured at 4C or less.
All freezers (walk-in cooler, chest freezer, etc.) measured at -18C or less.
High temperature dishwasher (dish pit)'s sanitizing cycle measured at 74.7C at the plate level.
Low temperature dishwasher (drink station)'s sanitizing cycle measured at 50 ppm chlorine at the plate level.
Ice machine in sanitary condition for now - routine cleaning may need to be conducted soon.

* A water pipe broke in the next unit overnight. Spoke to a technician and the building manager on site. Damaged water pipe was a potable water line. The pipe is serviced and no additional water is expected in this unit for now. Pooling of water observed at the dish pit, customer washrooms and behind the grill/fryer line. Inspected foods for any water damages, none found.
