Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food was stored in the upright cooler, which was at 5.7 degrees C.
Corrective Action(s): Staff transferred the cold potentially hazardous food from the upright cooler into the walk-in-cooler during the inspection. Ensure cold potentially hazardous food is maintained at a temperature at 4 degrees C or less to prevent potential growth of harmful bacteria and/or toxin production.

Observation: Upright cooler was above 4 degrees C (measured at 5.7 degrees C).
Corrective Action(s): Adjust/re-service the upright cooler so that it is maintained at a temperature at 4 degrees C or less; Correct by tomorrow. Keep the upright cooler empty of potentially hazardous food until it can be maintained at 4 degrees C or less; Effective immediately. Upright cooler was equipped with a thermometer.

Observation (CORRECTED DURING INSPECTION): Bleach stock bottles were observed stored near prepackaged flour in the stock room.
Corrective Action(s): Staff re-located the bleach bottles away from the prepackaged flour during the inspection. Ensure to store chemicals completely separately from food products to protect food products from any potential/incidental chemical contamination.

Comments

Both handsinks were supplied with liquid soap, hot and cold running water, and single-use paper towels.
Staff were observed washing their hands properly at the time of inspection.
Walk-in-cooler and beverage cooler were at 4 degrees C or less.
Stock room: walk-in-cooler (mostly used for vegetable and pop storage) was at 4 degrees C or less. Chest freezer and upright freezer were at -18 degrees C or less.
Previously cooked chicken was at 4 degrees C or less internal temperature in the walk-in-cooler.
Hot-held food in the front service area was at least 60 degrees C internal temperature.
3-compartment sink was supplied with hot and cold running water. Sink plugs were available.
100 ppm chlorine sanitizer was available in the third compartment sink, both sanitizer pails with wiping cloths, and spray bottle.
Pest control program was in place via the mall.
Staff member on shift held valid FOODSAFE Level 1 course training (expiration date: September 18, 2028).
