302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation (CORRECTED DURING INSPECTION): Container of surface sanitizer had 0 ppm quats residual despite label saying it had just been changed. Staff had placed label but left to complete another task, so sanitizer bucket was left with a new label and old solution (that had zero sanitizing concentration) Corrective Action(s): Manager changed sanitizer immediately, new sanitizer concentration was at 200 ppm quats. Ensure staff do not label sanitizers as freshly prepared until the solution has been changed. Violation Score: 5

Routine inspection conducted: -Handwash stations equipped with liquid soap, paper towels, hot/cold running water -All coolers at 4 deg C or less -Freezers at -18 deg C or less Hot holding at 60 deg C or greater -General sanitation is satisfactory No signs of pests during inspection FOODSAFE certified staff on site High temperature dishwasher had achieved 71 deg C after rinse cycle (temperature logs)--> ensure to monitor and if rinse cycle does not show a minimum of 180 deg F (or 82 deg C), then you must either wait until booster warms up so that this temperature can be reached or call to have the machine repaired. Permit available with valid decal (post in front area)
