Observation: The facility does not have a handwash sink in the food prep area. As per the staff, the handwash sink located in washroom is used for washing hands.
Corrective Action(s): Ensure that adequate handwashing stations are available for staff working in the kitchen. Install liquid soap dispenser near the large dishwashing sink for staff to use it for handwashing. Ensure that both liquid soap dispenser and paper towel dispenser are stocked at all times.

Observation: Multiple food containers stored in kitchen and walk-in coolers were found uncovered.
Corrective Action(s): Ensure that food is properly covered and protected from contamination. Cover the containers with lids.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature:
- Chest freezer at -25C
- Walk-in cooler at 2C

Storage:
- All food items were stored at least 6" off the floor.
- Back storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Sanitizer pail available and the concentration of bleach noted at 200ppm.
- The facility has one large dishwashing sink for washing & rinsing and one small sink for sanitation step. The concentration of bleach solution measured at 200ppm.
- Washroom was maintained in good sanitary condition with supply of hot/cold running water, liquid soap and single-use paper towels.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.
- Screen door in the back was kept closed.

Administrative:
- Operator has valid FoodSafe Level 1 certificate.

COVID-19:
- Appropriate COVID-19 signage is provided on site. However, two customers were noticed without face mask and were served by the staff. Enforce COVID-19 protocols and remind customers to wear face mask when indoors.

ACTION REQUIRED:
As per last inspection (report #DKAL-BUCUS3), you were requested to provide the revised floor plans of the facility. Please submit the updated floor plans to the district EHO by November 26, 2021.

A follow-up inspection will be conducted to ensure compliance.
