Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: One spray bottle of bleach solution measured >200ppm chlorine. One bucket in the dishwashing area contained soap and bleach mixed with water.
Correction: Ensure all bleach solutions measure 100-200ppm chlorine for effective surface sanitizing. Dilute spray bottle.

DO NO MIX soap with bleach as this can reduce the effectiveness of bleach as a sanitizer.
