Observation (CORRECTED DURING INSPECTION): Three of the sanitizer bottles (two in kitchen and one in bar) were too strong. Sanitizer strength could not be tested - above detection limit of test strip.
Corrective Action(s): Ensure Quats sanitizing solution is maintained at 200ppm. Concentrations in excess of 200ppm may be toxic for people. Sanitizer bottles were either diluted to 200ppm or were removed from the preparation areas.

Corrective Action(s): Ensure all foods are stored off the floor and protected from potential contamination.

Observation: Sanitizer spray bottles were unlabelled.
Corrective Action(s): Ensure all chemicals are properly labelled to prevent accidental mixing or misuse of chemicals. Once labels fade or fall off, containers must be relabelled. Bottles were labelled at the time of inspection.

Comments

-Walk-in cooler was at 4C.
-Prep cooler was at 4C (top and bottom).
-Bar cooler (dairy) was at 4C.
-Walk-in freezer was at -11C.
-Upright freezer was at -12C.
-Frozen novelty freezer was at -30C.
-Temperatures are tracked on the operator's phone using an app and digital tracker.
-High temperature dishwasher had a final rinse temperature of 75C on the dish surface (minimum 71C required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Equipment and utensils were found to be clean and sanitary at the time of inspection.
-Ice machine was found to be clean and sanitary. Bar area ice scoop stored in a sanitary manner.
-No signs of pests noted at the time of inspection.
-Washroom clean and well maintained.
-General sanitation satisfactory at the time of inspection. Some attention required along the vents of the frying area.
-Manager on-site had valid Foodsafe Level 1 - valid until Feb 23, 2022.
