Observation: - Fabric partition used behind back prep table to cover/protect wall. This surface is not suitable for use in a food premises. Additionally, it is not a suitable solution to repair the wall finish which show damage.
Corrective Action(s): - Remove fabric partition. [Corrected during inspection].
- All surfaces in a food premises must be smooth, non-absorbent and washable. Repair/re-paint wall surface so that is maintained in a washable condition. [Correction date: 1 month]. Operator to email confirmation once complete.

Comments

- General sanitation of premises and equipment was satisfactory. Minor grease accumulation noted under deep fryer. Reminder to ensure the floor under deep fryer is scrubbed routinely to prevent any accumulation. Exhaust canopy and backsplash free from grease accumulation.
- Handsinks equipped with hot and cold water, liquid soap and paper towel
- Coolers were operating at acceptable temperatures (4C or colder):
- Sliding door cooler 3C
- Delfield 2 door reach in cooler 4C
- Prep cooler 3C
- Undercounter cooler (front service area) 4C
- Beverage coolers 4C
*Drawer coolers not in use.
- Thermometers present in coolers for temperature monitoring
- Food in coolers and freezer stored in a manner to prevent contamination (ie. wrapped/covered)
- 2 door reach in freezer -17C
- No food items stored on ice at salad bar. Food items on display in the salad bar had been discarded for the day.
- Hot holding of soup was at an adequate temperature (60C or higher).
- No food items were stored in steam table. Cooked rice was noted being cooled in a shallow metal tray on ice.
- High temperature dishwasher operational. Final rinse measured 82C at dish surface
- Bleach sanitizer solution present and in use with wiping cloths. Reviewed mixing proportions with staff. Concentration of solution measured 200ppm chlorine.
- Ice machine appeared cleaned/maintained. Lid/cover in place. Scoop stored outside of unit.
- No signs of pest activity noted at time of the inspection.
- Operator has completed Foodsafe level 1 (certificate valid until 17-April-2024). This was outstanding from the previous inspection and has now been corrected.
