Corrective Action(s): Store imitaiton crab on cooler in the back at temperature less than 4C. Repair the drinks cooler which is now used for storage of other food items and ensure that the internal temperature of food items is maintained less than 4C

Comments

- Handsinks in kitchen, bar and staff washroom are supplied with hot and cold running water, liquid soap and paper towel
- All coolers in the back are maintained at less than 4C. Thermometers are available in all coolers and freezers
- Upright freezer is measured at less than -18C
- Hot holding units for rice and soups are measured at 60C or above
- Sushi rice is measured at pH 4.6
- High temperature dishwasher is measured at 72C during final rinse cycle at the dish surface
- Food contact surface sanitizer is available at front sushi bar and back area at 200ppm chlorine residual
- Food storage practices are satisfactory
- No evidence of pest activity is noted.
- FOODSAFE level 1 certification is verified at the time of inspection
- General sanitation is satisfactory.
- Covid Safety plan is developed and implemented. Facility is not open for dine in.
