Coolers below 4 Celsius. Freezers at -18 Celsius and or products frozen solid. Hot Held foods maintained above 60 Celsius. Dishwasher final disinfecting rinse + 50 ppm Chlorine. Wiping cloths kept in sanitizer tested at 100 ppm Chlorine. Soft service mix in hopper below 4 Celsius. Quat sanitizer spray bottles observed tested at 200 ppm. Recommend that food safe sanitizer spray bottles have a designated storage area in food preparation area for easy access for staff. Seating area maintained. Washrooms maintained, liquid soap and hand drying device available.
