Observation (CORRECTED DURING INSPECTION): Back handwash station was obstructed at start of inspection with a container of brown sugar mix and a pot used for transferring cooked tapioca pearls.

- Operator relocated container and pot. Ensure handwash stations are accessible at all times to facilitate in proper hand hygiene.

Observation: Tapioca flour noted on the floor behind and under prep cooler. This area is next to where the tapioca flour is stored and the dough for pearls is made.
Corrective Action(s): Thoroughly clean and sanitize above mentioned area. Pull out the prep cooler to access hard to reach areas.

- Prep cooler (dairy and juice): 4C
- Mini fridge: 3C
- Prep cooler (front): 2C
- 2-door cooler (back): 2C
- Stand-up freezer: -20C
- 3-door prep cooler: 5C (non-PHFs and staff lunch only)

- Handsinks supplied with hot+cold water, liquid soap and paper towels. (see code 401 regarding obstruction)
- Dishwasher reached final rinse temperature of 72.8C at the plate.
- Drain plugs available at 2 compartment sink.
- Bleach sanitizer solution in spray bottle measured 200ppm chlorine.
- Tapioca pearls stored at room temperature are discarded after 1.5 hours if not used.
- General sanitation satisfactory except for above mentioned area (see code 306).
- Ice machine and scoop were maintained in sanitary condition.
- Temperature logs are recorded but not kept on site after the end of each day. Recommend to keep copies on site for reference.
- No signs of pests at time of inspection.

Please update the undersigned regarding FOODSAFE certification. Ensure there is always one staff on site with valid FOODSAFE.
