Observation: a) Food in inserts in counter cooler at front service area observed above 4 C. Temperatures ranged from 6 to 16 C. Covers not on most inserts. Food stored in plastic containers inside metal inserts.
b) Display cooler in kitchen area measured 9 C.
Corrective Action(s): a) Discarded inserts of food and advised operator to do the following:
- Adjust unit colder to ensure foods in top inserts maintain 4 C or less at all times;
- keep all food in stainless steel inserts only and keep foods covered at all times when not dispensing food.
b) Relocate all potentially hazardous foods to alternate cooling units as discussed;
b) discarded potentially hazardous foods not in process of being thawed;
b) adjust or service unit such that it can maintain food at 4 C or less;

Observation: Kitchen area of premises excessively dirty and unsanitary in the following areas:
- Floor under and behind most equipment;
- sides of equipment and counters, walls and shelves;
- doors, door handles, internal parts of equipment and work surfaces;
- Dishwash area including sinks, walls and floor;
Corrective Action(s): - Remove all cardboard from premises used to absorb greases and food build up;
- thoroughly clean all identified areas (and anything else not specified but is dirty);
This must be completed by August 14th, 2018.

Comments

This premises needs to start monitoring and logging (writing down) temperatures of the cooling units on a daily basis. This will be an expectation moving forward.
Access to handwash station again difficult and needs to be improved. Handwashing should not occur at dish or vegetable sinks as they are needed for other duties.
