*General sanitation excellent throughout premises. No evidence of pest issues observed during inspection.
*Hand sinks at front counter and in washroom equipped with warm water, liquid soap and paper towels.
*Dish sinks in working order. Staff appear to be using full 3-compartment warewashing methods.
*Cooler and freezer temperatures satisfactory. Temperature logs kept up to date. Thermometers provided in each unit.
*Hot holding temperatures measured above 60 C.
*Quat sanitizer available from dispenser and present in cloth bucket at approximately 200ppm. Cloth stored in bucket.
*All food products stored off the floor and protected from contamination.
*Staff hand washing/glove use practices satisfactory during inspection.
*Food Safe training requirements met at time of inspection (several staff have taken the course).
*Tools and utensils maintained in clean condition. Knives for use at front counter are generally washed after each use (or at least every 4 hours).
*Washroom maintained in clean condition.
*Note: internals of ice machine could not be inspected during inspection. Ensure this unit is properly cleaned and sanitized on a regular schedule, according to manufacturer's directions.
