Observation (CORRECTED DURING INSPECTION): Lettuce, pickles, and sliced tomatoes held in inserts at room temperature were measured to be at ~7C and no time-tracking was being done. Inserts were full.
Corrective Action(s): Staff stated the toppings had just been put out recently and placed time stamps on inserts at time of inspection. Ensure to discard any leftovers after 2 hours. Fill inserts only 1/2 - 2/3 full to ensure items are turned over every 2 hours.

Observation: - Cooler doors and handles require cleaning and sanitizing - grease build-up noted.
- Walls and floors in hard to reach areas require cleaning - observed accumulation of dried up food/grease splatter. Ensure floors underneath equipment and storage racks are also cleaned on a regular basis.

Comments

- Hand sinks were supplied with hot and cold running water, liquid soap, and paper towels
- All sanitizer buckets in use were at the appropriate concentration of 200 ppm Quats
- Quats sanitizer in 3-compartment sink was also at 200 ppm
- All coolers were measured to be at or below 4C
- Freezer temperatures satisfactory
- Hot held items were all measured to be above 60C
- Cheese curds for poutine were held in insert on ice - good. Ensure to monitor temperature.
- Dipper well in use for ice cream scoops - good
- Food storage practices satisfactory - all food stored off the floor and properly covered
- Sanitation of ventilation canopy baffles satisfactory - operator stated they are cleaned and sanitized every 3 days
- Beverage dispenser nozzles maintained in sanitary conditions
- Temperature records well maintained and up to date
- No signs of pest activity noted at time of inspection
