General:
- handwashing stations stocked with soap, paper towels and hot and cold running water
- sanitizer measured 200ppm; ensure that sanitizer is changed as per manufacturer's instructions or whenever solution is murky
- three compartment sink set up at time of inspection (rinse compartment 200ppm quats)
- ice machine sanitary; scoop stored separately
- foods date-labelled to facilitate FIFO
- sauces re-heated in microwave; half portion to hot holding unit and half portion to be cooled with ice wand and placed in cooler

Note: bag of sanitizer solution (feeding into dispenser) is running low; change as necessary
