Observation: 1) chest freezer with broken door seal still on site
2) Sceen at back door is only temporary fix as it does not cover the entire door and there is a gap in the top becaue of the door hinge.
Corrective Action(s): 1) Replace or repair chest freezer
2) Must find screen that can cover the entire doorway at the back entrance.
Correct by: 2 weeks

Comments

The following corrections have been made:
- Prep cooler near front entrance: top inserts at 3 deg C and bottom at 2 deg C
-Handsink has been repaired to have hot running water
-Cleaning has been done in the following areas:
1) Behind the chest freezer
2) Underneath the cooking line
3)Around the dry storage area

What still needs to be done:
1) Get one staff member certified in FoodSafe (Operator was present and has foodsafe). Staff member has indicated that they are registered for an upcoming FoodSafe course.
2) Repair/replace chest freezer
3) Clean the fumehood grates more thoroughly as there is still grease/debris
4) Declutter back area by the 3 compartment sink
Note: Discussed with staff about ownership change occurring in the near future.
