Observation (CORRECTED DURING INSPECTION): White large sized cutting board was worn out. The board had noticeable cuts and chips. This makes cleaning and sanitizing the board difficult. Operator voluntarily disposed of the cutting board.
Corrective Action(s): Replace cutting board with an easily cleanable cutting board. Ensure all utensils and equipment are replaced as needed.

Comments

The facility is currently being cleaned. The carpet, kitchen and bar areas are being cleaned as facility was closed for the last month, approximately.

-The kitchen was closed for the past month.
-Walk-in cooler is at 4C. Place a thermometer inside the walk-in cooler.
-Walk-in freezer is at -18C.
-Dry storage is satisfactory
-Low temperature chemical (chlorine) dishwasher is able to achieve 50ppm. All plates, cups, utensils, and cutlery are currently being washed.
-Bleach available for sanitation. Label spray bottles
-Fume hood servicing is due in the coming weeks. Operator called service technician during inspection
