- Temperature Control: No concerns noted. Gauges noted. Monitoring logs reviewed.
- Manual Dishwashing: 4 Step Method. Sign posted. Drain stops are present. Test strips are on site and available for staff monitoring.
- Ensure all food contact surfaces are being cleaned and disinfected after use, or on a timely manner. (ie: 3-4 hours)
- Wiping cloth storage: (Quat based sanitizer) - refer to Violation Notes. - Use 200ppm Quats solution and make as per manufacturer's instructions. Change sanitizing solutions in sinks and buckets every couple of hours. Change sanitizing solutions in bottles daily. Use test strips to measure the concentration of sanitizer.
- Food Storage: Dispensing cups noted with handles. Do not store in food items. (ie: Prep coolers - cheese dispensing)
- Chemical storage: Spray bottles are to be kept clearly labelled and stored separately from food items.
- Sanitary facilities: Ok.
- Staff hygiene: Reviewed.
- Sanitation: Good Work!
- Structurally: No concerns noted.
- Garbage, Recycling and Composting Storage: Items are to be kept stored in covered, rodent proof containers.
- Pest Control: Monitoring is required to be conducted. No signs noted this date.
