203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Sauces made this morning at 4am were in the walk-in cooler and probed at 9C to 13C. The current procedure is to rapidly cool the sauces in the walk-in freezer, prior to storing in the walk-in cooler. Staff are using an infrared thermometer to check the surface temperature of the sauces.
Corrective Action(s): Hot potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less to prevent the growth of pathogens and or the formation of toxins. Obtain a probe thermometer for staff to verify the internal temperature of the sauces to verify cooling has been properly carried out. Sauce were removed to the walk-in freezer at the time of inspection to complete cooling.

Observation (CORRECTED DURING INSPECTION): Back handwash station had a dishwashing cup rack in the hand basin.
Corrective Action(s): Handwash station must be easily accessible (unobstructed) to allow staff to properly wash their hands. Rack was removed at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Rice scoop was stored with the handle in the rice along the prep line.
Corrective Action(s): Ensure scoops are stored in a sanitary manner to prevent potential contamination of foods. Rice scoop was removed from the rice at the time of inspection.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Floor tile by the cook area is broken and needs to be replaced. Water is pooling in the broken tile.
Corrective Action(s): Ensure all surfaces are maintained in good condition and are smooth, non-absorbent, and easily cleanable.

-Walk-in cooler (main kitchen) was at 3C.
-Walk-in cooler (back area) was at 4C.
-Both prep coolers were at 4C (top and bottom).
-Bar cooler was at 4C.
-Walk-in freezer was at -13C.
-Chest freezers (dry storage) were at -18C.
-Banquet area chest freezer was at -18C
-Kitchen upright freezer was at -16C.
-Chemical dishwasher had a final rinse of 50ppm to 100ppm chlorine on the dish surface (minimum 50ppm required for proper sanitizing).
-Bleach sanitizer pails labelled and tested at 100ppm to 200ppm.
-Main food prep handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Foods stored off the floor and covered. Raw meats stored separately from ready-to-eat foods.
-Ice machine clean and sanitary.
-Facility is serviced by a professional pest control operator twice a month. Very minor rodent activity observed in the bar area. Significant improvement noted in pest issues.
-General sanitation good at the time of inspection.
-Washroom clean and well maintained.
-Operator FoodSafe Level 1 valid until July 31, 2023.
