Observation:
The cardboard and saran wrap lining shelves has food and grease stains on it. The food and grease will attract pests. Operator indicated that staff change these materials when they have time.
Corrective Action(s):
Immediately change all the cardboard and saran wrap with new ones, and ensure staff are changing these twice a week. If this is not being followed, we will NOT allow the use of cardboard and saran wrap to line/cover shelves in the future.

Observation: The back 3-comp sink has a leaking pipe (3rd basin) and food debris accumulated on it. Pooling water and food debris will attract and harbor pests.
Corrective Action(s):
Repair or replace the leaking pipe and remove/clean the accumulated food.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C; freezers were -27C; hot holding unit was 61C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- General sanitation level is good. No signs of pests.
- Light covers installed on all light fixtures in the food processing areas.
- All foods stored in food grade containers; covered; in groups; and 6" off the floor.
- A new chest freezer (with two doors) has been purchased to replace the old one. Good.
- FoodSafe certified staff present.
- Exhaust canopy was cleaned this summer and scheduled for Aug. 2018.
