Observation: REPEAT violation. Undercounter cooler measured to be 11.4°C. Perishable items observed to be stored in cooler at time of inspection (shredded lettuce, sliced vegetables, cheese, sauces and bottled juice (keep refrigerated on label)). Products moved to walk-in cooler after confirming storage duration and internal temperature of product.
Correction: Coolers must maintain a temperature of 4°C or less. Do not store perishable items (e.g. cut vegetables, items with labels stating refrigeration is necessary, etc) in this unit until the unit can maintain temperatures of 4°C or less. Contact refrigeration technician to repair this unit immediately.
