203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Large containers (approx. 19L) of broth noted cooling at room temperature after cooking. As per food handler, after it cools down a bit in room temprature, they will be transferred to the walk-in freezer to finish the cooling process.
Corrective Action(s): **Issue corrected at the time of inspection** Discussed with staff the dangerous of cooling in large containers as there is a chance the broth is not cooled properly from 60C to 20C within 2 hours and then from 20C to 4C within 4 hours. Facility has ice wands and were noted stored in the walk-in cooler. Operator must ensure staff freeze the ice wands and use it to facilitate cooling for broth stored in large containers. This will be verified in the next routine inspection. Please ensure food handlers follow this practice.

Observation: 1. A container of raw meat was noted uncovered in the walk-in freezer. 2 blue containers of meat bones noted uncovered in the walk-in cooler.
2. > 200 ppm chlorine residual detected in 2 sanitizer spray bottles (one in the dining area and one in the prep area) - chlorine test strips bleached out.
Corrective Action(s): 1. Cover all unprotected food in the walk-in freezer and walk-in cooler with a lid or plastic wrap.

2. **Issue corrected at the time of inspection** Staff diluted the sanitizer spray bottles during the inspection. 200 pp chlorine residual was detected from the spray bottles after the dilution.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Frozen meat noted in one of the compartments of the 3-compartment sink, thawing in water. Running water was not running into this compartment with the thawing meat.
Corrective Action(s): **Issue corrected at the time of inspection** Issue was pointed out to the food handler and they had cold running water running into this sink containing the thawing meat.

304 - Premises not free of pests [s. 26(a)]
Observation: Mouse droppings noted in the cabinet below the handwash sink in between the prep coolers.
Multiple areas noted with mouse droppings in the back storage area - however, improvements were noted since the last inspection.
Corrective Action(s): Clean, sweep and sanitize all areas noted with mouse droppings. Continue to work with your pest control company to mediate pest issue.

Observation (CORRECTED DURING INSPECTION): Back door noted propped opened. Screen door was note at the back door however the screen is severly damaged and pest can get in through the damaged screen.
Corrective Action(s): Back door was closed when issue was brought up to staff.
Fix the screen door so no holes or gaps are available for pest to enter the facility. Do not keep the back door open until the screen has been fixed.

Routine inspection conducted today:
Handwash stations, including washrooms, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were noted at 4.0C or below.
Note: Walk-in cooler was noted holding food at around 7.0C, however the cooler was in active use due to lunch rush. Operator must monitor the temperature in the walk-in cooler, if it is unable to hold food at 4.0C or below, move all cold potentially hazardous food to another functioning cooler and fix the walk-in cooler.
All freezer units were noted at -18C or below.
Good storage hierarchy noted.
Low temperature dish machine was noted with 50 PPM chlorine residual after washing and rinsing.
General cleanliness has noted improved in the facility - cookline noted cleaned and interior of the ice machine noted in a sanitary condition.
No improper dispensers were used or stored in bulk food containers or in the ice machine.
Mop bucket noted emptied after use.
