Observation: 1) Debris and a few mouse droppings observed on the floor underneath the counter of the bar.
2) Deep fryer debris and oil observed on the floor underneath the fixed deep fryer units.
Corrective Action(s): *Thoroughly clean and sanitize the affected areas.
*Use a long-handled bristle brush to scrub the floor surfaces underneath the deep fryer.

Comments

- Hand-washing basins are stocked with hot/cold water, soap, and single-use towels
- Refrigeration temperatures are ≤4o Celsius with exception of the walk-in cooler (8 C) and the Pepsi display cooler (9 C).
*Operator has taken measures to resolve the recent elevated temps in the 2 units. Please monitor the temps closely to confirm that the temps are restored to safe operating levels within 2 hours. If temperatures remain elevated after 2 hours, transfer all perishable foods to alternate coolers and contact a repair technician to inspect and repair the affected units.
- Freezer temperatures are satisfactory
- Quaternary-ammonium food-contact surface sanitizer solution available at 200ppm concentration
- High-temp dishwasher reached final rinse temperature of ≥71o Celsius
