Routine inspection conducted with the presence of 1 baker and 2 sales people. - Overall sanitation was satisfactory. - The proofer was in a sanitary condition and free of mold and smell. - The food processing tables were cleaned and sanitized. - The baker was observed pulling out the table and cleaning the hard to reach area- Excellent! - Dry storage area well organized. - No large/ small flies observed. Note: (1) New steel wool may be used for cleaning the non-food direct contact area. (2) Please put personal items (water bottle, coffee, cell phones, etc.) in a designated area and off from food processing table.
