Observation (CORRECTED DURING INSPECTION): (REPEATED VIOLATION) Paper towel dispensers at 2 handwash stations were found empty. Staff stated that they use cloth towel to wipe down wet hands.
Corrective Action(s): - Ensure that all handwash stations have adequate supply of hot and cold running water, liquid soap and single use paper towels.
- DO NOT use cloth towels for wiping wet hands.
Staff restocked the paper towel dispensers at the time of inspection.

Observation (CORRECTED DURING INSPECTION): (REPEATED VIOLATION) 1. Tin can was left in the dry storage container and was used as a scoop.
2. In the back storage area, one bag of onions was found on the floor.
3. Food products stored in the prep cooler and walk-in cooler were not covered.
Corrective Action(s): Ensure that food is protected from contamination at all times.
1. Use proper scoop with handle for handling dry food such as flour. Staff discarded the can at the time of inspection.
2. Store food products at least 6" off the floor. Staff moved the bag of onions to the shelving area.
3. Ensure that food is covered properly to protect it from risk of contamination.TO BE CORRECTED BY - Immediately

Observation: (REPEATED VIOLATION) Build up of food debris was observed in the corners, along the walls, behind the cooking line & under the dishwashing sink.
Corrective Action(s): - Maintain the facility in a sanitary condition. Deep clean the kitchen and remove food debris from the above mentioned area.
- Ensure that the facility along with hard to reach areas are cleaned regularly.

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature:
- Prep coolers (x2) at 4C or less
- Walk-in cooler at 3C
- Pop cooler at 2C
- Undercounter freezer at -15C
- Walk-in freezer at -15C
- Ice cream freezer at -11C

Storage:
- Dry storage area located in the back and upstairs.
Re-organize the storage area upstairs.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Sanitizer spray bottle available and the concentration of bleach noted at 200ppm.
- Sanitizer dispenser releases 50ppm chlorine residual at low temp mechanical dishwasher.
- 2 compartment sink available and maintained in good sanitary condition.
- No grease build-up noted on vents.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Operator has valid FoodSafe Level 1 certificate.
