Observation (CORRECTED DURING INSPECTION): Soup in warmer had internal temperature at 53.1'C at this time. Staff had advised the soup was placed in the unit at 10:00am and the temperature had not been adjusted since. Inspection conducted after 1:00pm. Soup was discarded at this time.
Corrective Action(s): Ensure the hot foods are kept at 60'C or above at all times. Confirm by using a probe thermometer on a regular basis.

Observation (CORRECTED DURING INSPECTION): White plastic ice scoop placed above the ice machine requires cleaning. Operator had discarded the scoop, as the handle was broken. New scoop to be in use.
Corrective Action(s): Ensure all utensils are washed/sanitized on a regular basis as per facility's food safety plan.

Observation (CORRECTED DURING INSPECTION): White plastic ice scoop stored directly above ice machine at front. Scoop discarded at this time. Refer to above violation.
Corrective Action(s): Ensure the scoop is placed in a sanitized container, never directly above the machine.

Routine inspection conducted:

-Handwash stations adequately supplied.
-Refrigeration temperatures satisfactory. Temperature monitoring system in place.
-200ppm QUAT solution available in a labelled spray bottle.
->>200ppm chlorine solution available by the dishwashing area for sanitizing cutting boards after handling raw meat, prior to washing though the dishwasher.
NOTE: Ensure staff are not using this solution to sanitize food prep surfaces, as the concentration is too high to be used for this purpose.
-Ventilation canopy hood maintained and serviced.
-No evidence of pest activity observed at this time. Washroom satisfactory.
-General food storage practice satisfactory.
-General maintenance and sanitation satisfactory.

NOTE: Cooked chickens being placed on a metal pan for cooling in the walk-in cooler at this time.
