Observation (CORRECTED DURING INSPECTION): No soup available at time of inspection. Reviewed soup preparation procedures with staff member at time of inspection. Improper reheating procedures explained by staff. The hot holding units should not be used to heat up soups. This issue was noted on the previous report.
Corrective Action(s): Staff to ensure soup is heated quickly to 74C in the microwave before transferring into a preheated hot holding unit to be maintained at 60C or higher. Do not use the hot holding unit to heat up the cold soup.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Did not detect any sanitizer in container that staff member believed to be sanitizer solution. Staff member said that she did not make the sanitizer solution as it was done in the morning before her shift.
Corrective Action(s): Ensure sanitizer is made fresh daily and changed routinely throughout the day to maintain minimum concentrations (100ppm chlorine sanitizer). Highly suggest obtaining chlorine test strips to employees can verify/check sanitizer concentrations.

Observation (CORRECTED DURING INSPECTION): Noted staff member on duty did not have long hair fully tied back.
Corrective Action(s): Ensure staff have adequate hair control (ie. fully tied back is acceptable).

Comments

Hand wash station fully equipped with soap, paper towel, hot and cold running water.
All cooler units (display case, under counter, sandwich prep, upright 2 door..etc) all less than 4C
Premises does not have any freezers.
Temperature logs maintained up to date.
Good general sanitation. No obvious sign of pest activity noted at time of inspection.
Meat slicer appeared clean at time of inspection. Operator said it is taken apart all all parts a thoroughly cleaned and sanitized after each use.
Ice machine appeared clean with scoop stored upright with handle outside of the ice.
High temperature dish washer achieved 71C (with thermolabel).
All foods appeared protected (ie. stored off the ground, covered..etc)
