-Fume hood still requires cleaning. The operator states that a professional company will come in this weekend for cleaning. Pest control has been on site. Ensure that pest control stays on contract at least monthly for at least 6 months. All cleaning has taken place. No new droppings observed. Items not required for food premise operation removed. Dishwasher was repaired and it reached 79 C at the plate level during the final rinse cycle.
