- Operator processes ready-to-eat meals for delivery. Meals are delivered in insulated bags and coolers to maintain hot food at or above 60C and cold food at or below 4C.
- Maximum 2 hours delivery time between YVR PREP and customer.
- Storage Areas: Exclusive locked Walk-In Cooler Space, exclusive use of 2-Door Freezer, exclusive use of shelving at Hot Station #3, and 1/2 storage cage outside dry storage room.
- Food storage practices at Hot Station #3, Walk-In Cooler, and 2-Door Freezer appear satisfactory. Food is protected from contamination.
- Walk-In Cooler: 2C
- 2-Door Freezer: -15C (food products maintained in a solid state)
- Handsinks accessible to Hot Station #3 are provided with hot and cold water, liquid soap, and papertowels.
- 200 ppm QUATS available for sanitizing food contact surfaces at Hot Station #3. Operator has QUATS test strips to verify concentration
- High Temperature Sanitizing Dishwasher: 73.9C at dish surface.
