Observation (CORRECTED DURING INSPECTION): Bucket of bleach and detergent with wiping cloths noted at deli station - noted at <50 ppm chlorine.
Corrective Action(s): Ensure sanitizer is maintained at 100-200 ppm chlorine.
If a bucket has a solution for cleaning use ONLY detergent/soap.
If bucket has a solution for sanitizing use ONLY bleach.
Do not mix both chemicals together because they will attack each other and cancel out the positive characteristics of the chemicals.
