Observation (CORRECTED DURING INSPECTION): - Cooked grilled chicken slices were being held at 37.9C in countertop steam table unit where soup is held. Staff member on duty reported she was unsure how long the chicken was at that temperature. Staff stated there was insufficient space in the heating/hot holding units typically used. Hot holding temperature for potentially hazardous foods must be 60C or higher.
Corrective Action(s): - Cooked chicken (medium sized insert) was discarded by staff member. Ensure equipment specified by food safety procedures is being used for heating and hot holding for specific products. Menu may need to be decreased if there are inadequate facilities to hold/handle food safely.

Observation (CORRECTED DURING INSPECTION): - Liquid soap dispenser at entrance to front service area was empty. Liquid soap and paper towel present at corner handsink; however, access was impeded by items stored on counter in front of sink.
Corrective Action(s): - Employee was directed to fill soap dispenser at the time of the inspection and remove items from in front of the other handsink. Handsinks must always be supplied with liquid soap and paper towel and be accessible for handwashing.

Observation: - Food debris, soiled paper towels/napkins, and moisture present under ice capp machine.
Corrective Action(s): - Pull out machine and thoroughly clean area to remove all debris. Ensure this area is cleaned frequently. [Correction date: today]

Comments

- Handsink in back storage area was supplied with liquid soap and paper towel.
- Coolers were operating and maintaining product at acceptable temperatures (4C or colder):
- Undercounter cooler 2C
- Sandwich cooler 4C
- Single door reach in cooler 1C
- Walk-in cooler 3C (shared with food store)
- Milk/cream dispenser (adjacent to POS) 3C
- Milk/cream dispenser (back counter of front service area) 4C *Door was not closing properly. Re-adjust containers inside so that door closes fully.
- Freezers were maintaining products in a frozen state.
- Single door reach in cooler -20C
- Walk-in freezer -18C
- Hot holding of potentially hazardous foods (hashbrowns, potato wedges, chicken strips and patties, egg bites, beyond meat patties, soup) was at acceptable temperature (60C or higher) with the exception of the grilled chicken slices noted above.
- Quats sanitizer present from dispenser at 2 compartment warewashing sink. Concentration measured 200ppm.
- Staff knowledgeable about proper warewashing procedures - wash, rinse, sanitize, air dry.
- Quats sanitizer solution present in buckets with wiping cloths immersed. Concentration measured 200ppm.
- No signs of pest activity noted at the time of the inspection.
- Storage shed maintained with items stored on shelving.
- Staff member on duty reported she completed Foodsafe level 1 in 2018. Certification to be verified on database.
