Dishwasher has a final sanitizing rinse of 50pm chlorine. Check daily.
Do not store higher risk foods such as eggs and meats in upper prep cooler inserts unless they are at 4 C or colder or are discarded after 2 hours.

***** Counter top fryer to be stored where there is mechanical ventilation so that any smoke or grease fumes will be removed. Today, no smoke/grease noted. Check with other agencies regarding their requirements for fryer also. *****
