Observation: Back area of facility observed with lots of cobwebs and dust/lint build up at fan exhaust of ice cream unit.
Corrective Action(s): This area needs improved cleaning.

Observation: Ice cream processing area floor not made of suitable material, nor in good condition. Plywood floor peeling up in areas. Coloured dark making it difficult to clean or see what needs cleaning.
Corrective Action(s): Develop plan to replace floor as discussed. Make sure to address floor wall connections and ensure they are smooth easily cleanable, durable and continuous. Discussed replacing wood table in same area with stainlees steel. Address in off season is acceptable.

Comments

Ice cream scoops currently placed in water and changed hourly. Recommend use of dipper well (provides continual running water) for ice cream scoops and prevents contamination issues with water reservoir. Alternatively, use of quats solution at 200 ppm in water and changed regularly will help reduce contamination concerns.

Remove paints, chemicals (pesticides) and tools from food storage areas as discussed.

Make sure to follow the 2 compartment sink processes for dishwashing, especially when breaking down ice cream machine.
