Corrective Action(s): Ensure inserts are not stacked without a lid to prevent contamination of the food from the bottom of the container.

Observation (CORRECTED DURING INSPECTION): Frozen meat being defrosted in a prep sink at room temperature
Corrective Action(s): Ensure food is defrosted under constant cold running water, in the cooler or if a small amount in the microwave. Defrosting should never be done at room temperature.

-hood vent has a lot of grease build up on vent covers as well as the entire perimeter
-The bottom of several prep coolers has spilled food
-floor throughtout the perimeter of the alcohol storage room
-The bottom shelf and the dry storage bins in the back prep area by April 1/23
