Observation:
Mice droppings and food crumbs observed beneath the dry food storage shelves in the corner. Droppings contain diseases and food crumbs attract pests.
Corrective Action(s):
Immediately clean up the droppings and crumbs, and sanitize the area. Contact your pest control company and inform them of the droppings.

Comments

A routine inspection was conducted with the practicum student (Sophia Kim) shadowing, the following observations were made:
- Coolers 4C or colder; freezer was -10C; hot holding units 65C; thermometers present; temperature records reviewed and all in order; and temperatures recorded twice a day.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All food stored in food grade containers; labeled; date coded; in groups with proteins separate from non-proteins; and 6" off the floor on shelves.
- No expired food for sale or in use. FIFO rules being followed.
- General sanitation level is good.
- Quats sanitizer in spray bottle, and in 3-comp sink for manual dishwashing was 200ppm strength.
- FoodSafe certified staff present.
- COVID-19 mitigation plan present and in place. Mask being worn by staff; 2m markings on floor; increased cleaning of high touch areas and seating areas (after each customer use); and Subway's standard handwashing frequency and glove wearing.
- Front u/c cooler, beneath the food ovens, is still NOT being used for storage of PHF as the temperature can't be maintained below 4C.
- Inspection results were discussed with the supervisor. Signature was not obtained due to COVID-19 precautions.
