Observation (CORRECTED DURING INSPECTION): A small tray of cream cheese was stored at room temperature outside of sushi cooler. Internal temperature measured at 13C. Operator stated it was taken out an hour ago.
Corrective Action(s): Cream cheese is a potentially hazardous food that must be stored at or below 4 degrees. Staff moved the cheese into the undercounter cooler.

Observation (CORRECTED DURING INSPECTION): Used rice scoop stored in a insert with ambient temperature water. Water temperature measured at 21C.
Corrective Action(s): Clean and sanitize the rice scoop. Used ice scoop must be stored in ice water at 4C or less. Alternatively, clean and sanitize the scoop each time after use.

Observation: 1. Scoop was stored inside the container with the food. The handle part was in direct contact with the food.
2. Various containers of food not covered while stored inside the stand-up cooler and undercounter cooler.
Corrective Action(s): 1. Do not store any scoops inside the food container as this can contaminate the food. Store scoops inside a sanitary container outside of the food container.
2. Ensure containers of food are covered with a food-grade physical barrier such as saran wrap during storage. This protects food from potential contamination. Correct by: today.

Observation: Accumulation of food debris and grease observed at the following areas:
- Behind the chest coolers at the kitchen.
- Under the grill and deep fryer.
Corrective Action(s): Clean the aforementioned areas. Follow your sanitation plan for regulation cleaning schedule. Correct by: Apr 02, 2021.

- Coolers (sushi, undercounter, stand-up) maintained at 4C or less.
- 2 chest freezers functional.
- Miso soup hot held at 68C.
- Sushi rice measured with a pH of less than 4.2.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm bleach sanitizer available in spray bottles and in buckets.
- High temperature dishwasher registered 75C at the plate level.
- Ice machine maintained in sanitary condition.
- Food products stored off the ground.
- No pest activities observed at the time of inspection.
- Foodsafe requirement met.

- Mask mandatory with in the facility. Operator and staff worn mask properly.
