Observation (CORRECTED DURING INSPECTION): Sanitizer bucket for low temperature dishwasher recently changed. Sanitizer line not prime, 0ppm chlorine detected at the plate level at the time of inspection.
Corrective Action(s): Staff primed the sanitizer line and 50ppm chlorine detected at the plate level during the final rinse cycle. Ensure when a new sanitizer container is used the sanitizer line is primed and the concentration of chlorine is checked using test strips prior to washing and dishes/utensils/equipment.

Observation: Some mouse droppings observed in the area outside the liquor walk in cooler. Areas from the last inspection no droppings observed - good. Pest control technician's service report indicates activity is now in the attic and back area.
Corrective Action(s): Continue working with the pest control company to deal with the mouse issue. Reminder to keep the back door closed during operation and when receiving deliveries to quickly close the door. Clean spills quickly and clean all hard to reach areas on a daily basis.

Serving area and bar hand sinks provided with liquid soap and paper towels.
200ppm quats available for use in containers with wiping cloths stored in solution when not in use. Labeled quats spray bottles also available for use.
200ppm quats dispensed from the chemical dispensing station.
Dishwasher registers 50ppm chlorine during the final rinse cycle.
Walk in cooler at 2-3 degrees C. Attached walk in freezer at -16 degrees C.
Beverage walk in cooler at or below 4 degrees C.
