Observation (CORRECTED DURING INSPECTION): * Three of the four hand washing sinks did not have any soap; operator addressed immediately; operator mentioned that their head office decision was to switch some hand sinks to "dump" sinks for dumping coffee-- this change was NOT approved via health department
Corrective Action(s): * Ensure all hand washing stations have adequate soap and paper towel supply at all times during operation

Corrective Action(s): * DO NOT store any food/food equipment on hand sinks; dumping coffee down hand sink is acceptable though

Observation: * Some flies were found at baking station area; operator turned on the fly air curtain system at back door to deter flies

* Monitoring records were available and up to date
* Cold-holding units were 4'C/40'F or colder
* Hot-holding units were 60'C/140'F or hotter
* Freezer walk-in was -9'C and should be maintained at -18'C or colder
* Sanitizer was available and at 200 ppm quaternary ammonium concentration
* Note: several hand sinks were changed to "dump" sinks but these must also be available for hand washing purposes as per approved plans
* Note: Keep all wiping rags in sanitizer between use
* Note: ensure all fly control activate and controlling fly harbourage
* Staff were dressed appropriately and had hair protection
* Follow up inspection to be done in next week
