Observation: Foods stored at room tempetaure do not have time stamps.
Foods stored in prep cooler are not maintained at 4C.
Correction: Discard all potentially hazardous foods that have been temperature abused.
Follow company policy on time stamps for foods kept at room temprature. Refrigerated foods shall be stored in other working cooler until the prep cooler is repaired.

All noted violations have been corrected. Communicated with restaurant manager, Monica, regarding handwashing prior to handling foods.
