Observation (CORRECTED DURING INSPECTION): 1. A batch of boiled potatoes discarded due to time and temperature abuse (cooked potatoes cooled in room temperature over night).
2. A tray of pre-portioned ranch sauce relocated to a cooler at this time as per the manufacture's direction (keep refrigerated after opening).

Observation (CORRECTED DURING INSPECTION): Vegetable pusher was observed with dried food debris. Onsite staff initiated cleaning process at this time.

Observation: Rodent droppings noted in the following areas:
1. Under and next to the pizza assembly cooler
2. Under the dry storage area by the kitchen entrance
3. Under the 3 compartment sink
4. Along the window metal rails by the customer area

Small amount of fruit flies noted in the dishwashing area.
Corrective Action(s): Clean and sanitize areas impacted by rodent droppings. Contact your pest control company for an assessment on fruit fly activities. Retain a copy of most recent pest report for review. Correct this by: April 11, 2022.

Observation: Sanitation issues noted throughout the facility, especially:
1. Grease and food build up around and behind the deep fryer
2. Clutter under and around the 3 compartment sink

Routine inspection conducted:
Hand washing sinks are fully equipped with hot and cold running water, liquid soap and paper towels.
All coolers measured at 4C or less (one of drink cooler in the front was measured at 18C; however, only non-potentially hazardous foods are stored here).
Freezer measured at -18C or less.
Hot holding measured at 60C or higher.
Food contact surface sanitizer measured at 100 ppm chlorine as per test strips.
3 compartment sink with drain plugs available for manual dishwashing.
Monthly professional pest control service in place. Most recent pest report reviewed on site.
