Observation (CORRECTED DURING INSPECTION): Meat cleavers observed stored in spacing between 2 counters and between a counter and chopping block.
Corrective Action(s): Ensure all utensils are stored in a sanitary manner at all times. Operator has stated a magnetic knife holder has been purchased and to be installed. Instructed staff to wash cleavers in the high temperature dishwasher.

Temperature monitoring records not available for review. Monitor and record temperatures of all coolers, freezers, and hot holding. Have records available for review at all times.

2 compartment sink and both hand sinks along preparation line provided with liquid soap and paper towels.
100ppm chlorine available for use. Reminder to store all wiping cloths in this solution when not in use.
Improvement in storage of food products. Foods covered with saran wrap in the walk in cooler. Dry storage area organized.
Improvement in cleaning. Reminder to clean all hard to reach areas and underneath/behind equipment on a regular basis. Further non compliance may result in the issuance of a violation ticket or a closure ORDER.
