Observation: Food premises not maintained in sanitary condition. Grease build-up and food debris noted on food equipment such as food warmer, ice machine. All floors under equipment have a build up of grease and food debris. Liquids from boxes of chicken in walk-in cooler, dripping directly on the floors and ponding.
Corrective Action(s): Premises require a thorough cleaning to remove grease build up and food debris. Place container under boxes of chicken to collect drippings. Date to be corrected by: 2021/05/02

Observation: QUATs sanitizer measured between 800-1000ppm. Quats sanitizer should be maintained at 200ppm.
Observed missing and cracked floor tiles in the kitchen.
Corrective Action(s): Adjust the QUATs sanitizer dispenser to maintain sanitizer concentration of 200ppm QUATs. In meantime, manually mix to reach 200ppm residual. Verify using your test strips. Date to be corrected by: Immediately.
Replace missing and cracked floor tiles to provide cleanable surface. Date to be corrected by: 1 week.

Comments

Ensure all equipment is thoroughly cleaned and maintained. Do not use food warmer with broken drawers as it cannot be cleaned properly.

- Handwashing sinks equipped with hot and cold running water, liquid soap and paper towels
- Food in hot holding units are 60C and hotter
- Walk-in freezer is -18 or colder
- Foods in coolers are at 4C and colder
- Time/temperature monitoring of foods in the Taco Bell prep fridge and warmer are being carried out
- Staff are wearing hair nets during inspection

Covid-19 measures:
- Take-out only as per PHO recent order
- Floor markers and hand sanitizer available for customers
- Staff are wearing masks
- Plexi-barriers available at the cashier registers
- Ensure daily health screening of staff is done prior to commencing shifts
