Observation (CORRECTED DURING INSPECTION): When asked, one of the employees indicated that foods are reheated in the microwave to 145 degF. This is not the proper reheating temperature.
Corrective Action(s): Foods must be reheated in the microwave to 165 degF (74 degC) and then they can be placed in the warmer which should be above 140 degF (60 degC).

-Temperature logs are being maintained as required. START USING THE NEW TEMPERATURE LOGS.
-This location has new sanitizer stations that adhere to the counter along the sandwich prep line. There is a green bin that holds chlorine sanitizer (100ppm) with a brush attachment at the top. Knives are supposed to be dipped into this sanitizer solution then placed in the empty slot beside it that's perforated for "drying" prior to use. The operator did not have the communique with regards to proper use of this sanitizer knife cleaner on-site. There is a potential for chemical contamination if wet knives are used on the sandwiches. Follow up with head office and ask for proper use procedures. During the inspection, no sanitizer was detected in both sanitizer buckets. A fresh solution made with the packet sanitizer had 100ppm chlorine in it.
