General sanitation - satisfactory. Hand-sink supplied with liquid soap, paper towels, hot/cold running water. Prep coolers all at 3.5 C. Walk in cooler: 2.8 C. Walk in freezer: -18 C. Very clean and well organized. Alcohol walk in cooler - satisfactory. All other freezers at -18 deg C or less. Hot holding (across cooking line) > 60 C. Dry storage area - satisfactory. Foods in coolers are covered and date stamped; storage is well organized. Quat sanitizer and Bleach in spray bottles; (purple solution) at 200 ppm Quats; Bleach > 100 ppm /located throughout kitchen and in bar area/. Dishwasher at 50 ppm of Chlorine solution. Glass-washer (iodine) at 12.5 ppm. Ice-bins- satisfactory. Ice-scoops stored safely at the time of inspection. Fan hood - satisfactory. Utensils in a cooking line stored in an ice-bath. No signs of pests at time of inspection. Staff washroom (back) - clean and fully supplied. Note: 2-compartment sink across the dishwasher is not in service ( hot/cold taps are broken). Recommendation: - Please service the low temperature dishwasher.The dishwasher is leaking when a cycle is changed (black pipe under it).
