Observation: 1. No sanitizer available - staff unaware of how to prepare sanitizer
2. Dishwasher not operating at time of inspection - tested at 63-65C internal temperature
Corrective Action(s): Ensure there is a 100ppm Cl sanitizer available at all times for counters, etc. - corrected during inspection
100ppm Cl = 1 tbsp bleach for 4L water. This is to be available at ALL times and wiping cloths are to be stored in the bucket of solution. Be sure to change the solution every 3-4 hours.

2. dishwasher to be repaired. Ensure dishwasher reached 82C at manifold and 71C at plates surface during the rinse cycle.
In the interim you may only use single-use dishes. No re-usable dishes are to be used until dishwasher is repaired.

Clean and sanitize both pieces of equipment before re-using.
