Observation (CORRECTED DURING INSPECTION): Miso soup on stove top noted at 53 C. Stove element is off.

Observation: Sushi cutting boards sanitized at end of day. In between food prep tasks stations are wiped with water soaked wiping cloth only.
Corrective Action(s): Ensure all food contact surfaces (sushi prep tables/cutting boards) are sanitized regularly with 100-200 ppm chlorine and wiping cloth. Reviewed practice with operator during inspection.

Observation: No liquid soap available at sushi sinks (2), no paper towel available for waitress station hand sink. Sushi soap dispensers remove from refinished wall and available on lower shelf. Bar of soap available at one sushi sink and back dishwashing sink.
Corrective Action(s): Ensure all hand sinks are supplied with hot & cold water, liquid soap and paper towel and are easily accessible by food handlers. Do not use bar of soap in place of liquid soap in dispenser/pump.

Screen door has hole noted in lower section.
Corrective Action(s): Ensure all exterior doors are kept closed when not in use or screen door is in use. Ensure screen door is maintained in good condition to prevent possible pest entry. Repair screen door and use. Until screen door is repaired keep the side door closed.

Observation: Plastic wrap on vent hood, AC unit and other surfaces.
Corrective Action(s): Ensure all materials are smooth, durable, easy to clean and non-absorbent. Plastic wrap is a temporary cover over food and is not designed to cover surfaces to avoid cleaning. Remove plastic wrap and increase daily cleaning heavily soiled areas.

Observation: 1. Missing 3 doors between both sushi display coolers.
2. Sushi cutting boards in poor condition (3 of 4 boards) - brown, deep cuts
Corrective Action(s): 1.Ensure all equipment in premises are maintained is good working condition. Repair / replace missing/ damaged display cooler door. Operator says doors have been ordered. Plan is to replace both display coolers in the future for newer model.

***Recommend moving one door from left unit to the right unit to complete one display cooler unit and turn off the left unit until all doors in place to prevent over working display cooler unit motor.

2. Refinish cutting boards (grind them down) to remove deep cuts in boards and allow for proper sanitizing of surfaces.
